Ingredients
5 ripe tomatoes
- 2 garlic
- 2 TBS olive oil
- 1 onion
- 1TBS ginger
- 1 red chilli, Plus some for garnish
- 1 Bunch coriander leaves and stems, Plus some for garnish
- 200ml tomato juice
- 300ml coconut milk
- 1TBS brown sugar
- 2TBS fish sauce
- Fried Asian shallots, Garnish

Describe the preparation steps of your recipe
Quarter tomatoes place on a lined baking tray and drizzle with olive oil.
season with pepper and salt. Bake for 30 mins
In thermo bowl place ginger,onion, chilli, garlic and corriander.
saute in oil for 3 mins on 100 speed 1
Add tomato juice and coconut milk and bring to the boil.
5 mins speed 1 on 100.
Add tomatoes and their juices on tray to thermo bowl.
add the brown sugar and fish sauce.
blitz on speed 9 for 20secs.
Serve garnished with coriander leaves, finely sliced chilli and fried Asian shallots.
enjoy with flat or naan bread.
