Ingredients

5 ripe tomatoes

  • 2 garlic
  • 2 TBS olive oil
  • 1 onion
  • 1TBS ginger
  • 1 red chilli, Plus some for garnish
  • 1 Bunch coriander leaves and stems, Plus some for garnish
  • 200ml tomato juice
  • 300ml coconut milk
  • 1TBS brown sugar
  • 2TBS fish sauce
  • Fried Asian shallots, Garnish

Recipe's preparation

    Method
  1. Describe the preparation steps of your recipe

  2. Quarter tomatoes place on a lined baking tray and drizzle with olive oil.

    season with pepper and salt. Bake for 30 mins

  3. In thermo bowl place ginger,onion, chilli, garlic and corriander.

    saute in oil for 3 mins on 100 speed 1

  4. Add tomato juice and coconut milk and bring to the boil.

    5 mins speed 1 on 100.

  5. Add tomatoes and their juices on tray to thermo bowl.

    add the brown sugar and fish sauce.

    blitz on speed 9 for 20secs.

     

  6. Serve garnished with coriander leaves, finely sliced chilli and fried Asian shallots.

    enjoy with flat or naan bread.
