- 1 red onion, peeled and halved
- 2 garlic cloves
- 1 large handful fresh basil
- 400 g chicken breast, cut into chunks
- 6 pieces shortcut bacon
- 2 cans Whole peeled tomatoes
- 1 zucchini, cut into chunks
- 50 g balsamic vinegar
- 70 g shaved parmesan
- 2 level tablespoons vegetable stock

Describe the preparation steps of your recipe
Chop the onion, basil and garlic speed 5 for 3 seconds.
Scrape down the bowl and add the rest of the ingredients, except the parmesan.
Cook for 35 minutes, speed 1, 100 degrees.
Add the parmesan and blitz for about 1 minute at speed 6 or 7 with the basket on top. TM5 users might not have a problem with the bigger bowl.

A strange recipe. The title says shredded chicken, but the chicken gets blitzed along with the soup, so the whole thing is like a thick purée, but with a weird texture. No shredded chicken left at the end of the blitzing. There is also way too much parmesan. The end result tastes like a weird-textured cheesy bolognese sauce. The recipe has potential if it was made just as tomato soup, without the cheese and blitzed chicken, then stir in shredded chicken at the end and sprinkle a little parmesan on top to serve.
All I can say is wow!!! Thanks so much for sharing this recipe. Will be a staple in my house!!
This was delicious. Would also be nice stirred through some pasta or chunky veg as a sauce.
