Ingredients

Soup

  • 40 grams olive oil
  • 250 grams bacon, Diced up small
  • 3 cloves garlic
  • 1 onion, quartered
  • 1/3 cauliflower, Cut into florets
  • 400 grams Washed potatoes, Diced into 2cm cubes
  • 2 level teaspoons vege stock powder
  • 1 Chicken Stock Cube
  • 800 grams water
  • 100 grams thickened cream
  • parsley to serve

Recipe's preparation

  1. 1. Place diced bacon in the TM bowl with 20 grams olive oil, cook 10min/100/speed 1. Scrape down sides, remove bacon and place on paper towel, set aside.

    2. Add onion to the TM bowl and blitz til smallish. Scrape down sides and add garlic with 20 grams olive oil, saute for 7min/100/speed 1.

    4. Add cauliflower and potato and cook for 5 mins/100/speed 1

    5. Add stock powders, water and pepper and cook for 20min/Varoma/speed 1. Check potatoes and make sure they are cooked through.

    6. Allow to cool slightly. Add 1/2 the bacon and blend the soup 1min/speed 9, increase speed gradually.

    7. Add cream and mix for 30sec/speed 4. Reheat 80 degrees/2 mins/speed 1 if neccesary.

    Serve with left over bacon, cracked pepper and parsley.

Tip

Serve with some fresh bread or bread rolls
