Ingredients
Minestrone Soup
- parsley, handful stalks removed
- basil, handful stalks removed
- 1 onion brown, halved
- 2 cloves garlic
- 30 grams olive oil
- 600 grams diced vegetables of choice, leek,carrot,celery,capsicum, leek, zucchini, peas, corn, pumpkin
- 40 grams tomato paste
- 750 grams water
- 2 tablespoon Vegetable stock paste
- 130 grams pasta shells mini, risoni is probably best as it doesn't disintegrate
- heaped tablespoons Grated Parmesan Cheese, to serve
- 1 can butter beans or borlotti beans or chickpeas

- Place parsley and basil into TM bowl and chop for 3 seconds on speed 7.
- Place onion and garlic into TM bowl and chop for 3 seconds speed 6. Add oil and sauté for 3 minutes at 100° speed 1.
- Add paste, water, stock, vegetables (except peas and zucchini if using) and cook for 15 minutes at 100° on Reverse + soft speed.
- Add pasta (and peas/zucchini) and cook for a further 15 minutes at 100° Reverse + soft speed.
- Add rinsed beans and herbs and heat through for 2 mins at 100° Reverse + soft speed.
- You may find this recipe is too thick for your liking. Do NOT overfill the bowl but rather CAREFULLY add boiling water as you serve into bowls and mix through. Alternatively, transfer to Thermoserver and carefully stir through boiling water.
Vegan/Vegetarian Minestrone Soup
Tip
Serve with grated parmesan and crusty bread. This is a meal in itself and will serve 4 hungry people and 6 average eaters. If you want a more 'tomatoey' soup, use a can of diced tomatoes as one of your vegetables.

This was delicious!! I substituted a tin of crushed tomatoes for some of the water, still used 600g veg, used dried herbs as didnt have fresh (probably nearly a tablespoon of each) and used black beans they were perfect as they were nice and small. I also loved the parmesan on top! Super tasty and loved by my vegetarian and non vegetarian family members, Great recipe thanks!
Good but next time I will replace some water with tinned tomatoes as I like to put lots of veges in
