  • 170 g almond meal
  • 200 g caster sugar
  • 70 g Coconut
  • 4 eggs
  • 2 tsp vanilla extract
  • 170 g Butter
  • 1/2 Cup blueberries or raspberries

Recipe's preparation







  1. Preheat oven to 180 degrees





    Lightly grease muffin tray











    1. Place butter in bowl and melt 3 mins/55 degrees/ speed 2.[/b] Leave in bowl to allow to cool for 5-10 minutes.





    2. Add eggs and vanilla extract to bowl and mix 3 sec/speed 5[/b]





    3. Add all dry ingredients to bowl (almond meal, sugar and coconut) and combine 15sec/sp5[/b]





    4. Pour into muffin tray ¾ filling each one





    5. Add 3 raspberry to the top of each muffin





    6. Bake 35 mins for muffins and 50-55mins if making it as a cake





    7. Cool in muffin tray for 5 mins then transfer to wire rack to cool

    I have used 60 G raw sugar & 60 g Golden Syrup - Less sweet but still yummy.

    when Raspberries were out of season I used Blueberries which worked fine

    Amazing these are now my go to. I think next time I will have the sugar as delicious as they are they are quite sweet. Instead of berries I put a side of banana and oats on top. I got 17muffins, instead of coconut I did oats as had none. Thank you!
