Ingredients

Pastry

  • 300 grams plain flour
  • 150 grams Butter, chilled, cut into pieces
  • 1 level teaspoons salt
  • 100 grams chilled water
  • 1 egg, whisked, for glazing pastry top before baking

Bechamel Sauce

  • 40 g Butter
  • 40 g plain flour
  • 300 g Milk
  • 1/2 tsp salt
  • 1/4 tsp white pepper
  • 1 tsp mustard powder

Pie filling

  • 300 g cooked chicken, shredded
  • 2 garlic cloves
  • 2 sprigs parsley leaf, fresh
  • 180 g carrots, peeled and cut into 4 cm pieces
  • 180 g onions, peeled and cut in halves
  • 3 slices bacon, streaky, quartered
  • 25 g olive oil
  • 80 g peas, fresh or frozen
  • 125 g Corn, fresh, frozen or tinned (drained)

Recipe's preparation

    Pastry
  1. Place flour, butter, salt and water in Closed lid"Closed lid" Insert measuring cup into mixing bowl lid and mix 20 seconds speed 4. Transfer pastry onto ThermoMat or floured surface and work into a ball. Divide ball into 2. You will need 2/3rds of the pastry for the base of the pie and 1/3rd for the top of the pie. Wrap in ThermoMat or plastic wrap and refridgerate until ready to asemble your pie.
    Wash and dry Closed lid"Closed lid" .
  2. Shred Chicken
  3. Place leftover barbeque chicken meat or steamed chicken breast into Closed lid"Closed lid" insert measuring cup into mixing bowl lid and shred 5 seconds Counter-clockwise operation"Counter-clockwise operation" speed 4.
    Remove and set aside in a large mixing bowl.
    No need to wash your Closed lid"Closed lid" move onto the bechamel sauce.
  4. Bechamel Sauce
  5. Place butter into Closed lid"Closed lid" insert measuring cup into mixing bowl lid melt 3 mins 100°C speed 1.
    Add flour to Closed lid"Closed lid" and insert measuring cup into bowl lid cook 3 mins 100°C speed 1.
    Next add milk, salt, white pepper and mustard powder to Closed lid"Closed lid" insert measuring cup into mixing bowl lid and cook 6 mins 90°C speed 4. Remove from bowl and add to shredded chicken. Set aside to cool.
    Wash and dry Closed lid"Closed lid" .
  6. Chicken & Vegetable Filling
  7. Add garlic and parsley to Closed lid"Closed lid" insert measuring cup into mixing bowl lid and chop 4 seconds speed 8. Scrape down sides. Add carrot, onion, bacon, corn and peas along with the olive oil and saute 5 mins 120°C speed 1. Remove from Closed lid"Closed lid" and combine with the chicken and bechamel sauce.
  8. Preparing the Pie
  9. Preheat oven to 200°C fan forced. Grease and flour a 26cm pie dish, set aside. Roll out the largest portion of pastry to fit your pie dish and lay gently in the pie dish. Roll out the smaller portion of pastry to fit the top of your pie dish. Place the filling mix into your pastry lined pie dish mounding the mix in the middle creating a volcano shape. Lay the top sheet of pastry over the filling and seal the edges with a fork. Brush with the whisked egg and place on middle shelf in oven, bake for 10 mins at 200°C then reduce temp to 175°C for 40 mins. This will help your base to become crisp and not soggy on the bottom. No need for blind baking the base with this method.

Tip

* Use a 26cm pie dish
* Filling should be quite cool before adding to the pastry.
* Remove pie from oven once pastry is golden brown and filling is heated through, rest for 5 mins before slicing.
* Serve with a crisp fresh salad or your favourite vegetables.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31).
