Ingredients

Chinese chicken pies

  • 25 g unsalted butter
  • 1 small piece leek
  • 150 g mushrooms
  • 2 teaspoons grated ginger
  • 2 tablespoons plain flour
  • 500 grams chicken stock
  • 60 grams peas
  • 500 grams chicken tenderloins
  • 1/2 bunch coriander fresh
  • 1/2 teaspoon Chinese Five Spice
  • 160 grams thickened cream
  • 2 frozen puff pastry sheets
  • 1 Beaten Egg
  • 1 tbsp sesame seeds
  • mixed leaf salad to serve

Recipe's preparation

    1. Place coriander into TM bowl and chop on speed 7 for 3 sec and then 
    2. scrap out and set aside
    3. 2.  Place leeks in TM Bowl and chop for 2 seconds on speed 5 and then scrap down the sides
    4. 3.  Add 25g butter and sautee for 3 minutes 100 degrees speed 1
    5. 4. Add 100g sliced mushrooms and grated ginger and cook for 1minute 
    6. 100 degrees speed 1 Counter-clockwise operation"Counter-clockwise operation"
    7. 5.  Add 2 tbsp plain flour, 500g chicken stock and cook for 2 minutes /Counter-clockwise operation"Counter-clockwise operation"  
    8. 100 degrees/ Gentle stir setting"Gentle stir setting"
    9. 6.  Add 60g peas, 1 tbs coriander, ½ tsp five spice, and salt and 
    10. pepper to taste
    11. 7.  While the sauce mixes place the varoma on the top and place chicken
    12.  tenderloins in the varoma.   Mix together on reverse on speed 1/ 
    13. varoma/ 16 minutes.
    14. 8.  Once chicken is cooked remove sauce into a bowl and place chicken 
    15. into the bowl and chop for 2 seconds on speed 5.
    16. 9.  Then place chicken in with the sauce and mix on spoon and add
    17. 160g thickened cream
    18. 10. Put the chicken mix into pie dishes and place pastry over the top, brush 
    19. with beaten egg and sprinkle with sesame seeds.  Cook in oven for
    20.  20 minutes on 180 degrees until golden.
