Ingredients

Gnocchi

  • 1000 grams potatoes, (starchy variety like Russet or Yukon Gold)
  • 100 grams gluten free flour, plain, (plus extra for dusting)
  • 1 egg, lightly beaten
  • 1 teaspoon salt

Ham & Gnocchi Bake

  • 2 tablespoons extra virgin olive oil
  • 1 leek, trimmed, thinly sliced
  • 250 grams thickened cream
  • 250 grams chicken stock
  • 80 grams Pomodoras Lemon & Thyme balsamic dressing
  • 250 grams tasty cheddar cheese, cut into 3 cm cubes
  • 100 grams Gruyere cheese, cut into 3 cm cubes
  • 2 teaspoons fresh thyme, leaves only
  • 4 slices ham, roughly torn

Recipe's preparation

    Make & Blanch Gnocchi
  1. Peel and cut the potatoes into chunks. Place them in the Varoma dish.

    Add 500g water to the Thermomix bowl, place the Varoma dish on top, and cook for 25 minutes at Varoma temperature on Speed 1, or until the potatoes are tender.
  2. Remove the Varoma dish and discard the water from the Thermomix bowl.

    Add the cooked potatoes to the bowl and mash for 20 seconds on Speed 4.
  3. Add the gluten-free flour, beaten egg, and salt to the mashed potatoes.

    Mix for 30 seconds on Speed 3, or until the dough comes together. If the dough is too sticky, add a little more flour.
  4. Turn the dough out onto a lightly floured surface. Divide it into 4 portions.

    Roll each portion into a long rope about 2 cm in diameter.

    Cut the ropes into 2 cm pieces and, if desired, roll each piece over the back of a fork to create ridges.
  5. Bring a large pot of salted water to a boil.

    Add the gnocchi in batches, and cook until they float to the surface (2minutes).

    Use a slotted spoon to transfer the cooked gnocchi to flameproof baking dish.
  6. Ham & Gnocchi Bake
  7. Preheat oven to 220°C/200°C fan-forced
  8. Place cubed cheddar & Gruyère cheese into the mixing bowl and chop for 5 seconds on Speed 5
    Then transfer into a bowl and set aside, Clean & dry mixing bowl
  9. Place the leek into the mixing bowl and chop for 5 seconds on Speed 5
  10. Add the olive oil and sauté for 3 minutes at 100°C on Speed 1.
  11. Add the cream, chicken stock, 150 grams of grated cheese, and the Pomodoras Lemon & Thyme balsamic dressing to the mixing bowl. Mix for 3 minutes, 120°C on Reverse, Speed 1.
  12. Pour mixure over the already cooked gnocchi and mix gently
  13. Arrange the ham pieces evenly in the cream mixture and sprinkle the remaining grated cheese on top
  14. Bake in the preheated oven for 25 minutes or until the gnocchi is golden and tender
  15. Let it stand for 5 minutes, then serve sprinkled with the thyme leaves
