Ingredients

Ham, Corn & Polenta Muffins

  • 110 grams polenta
  • 15 grams sugar
  • 215 grams flour
  • 1 level tablespoon baking powder
  • 40 grams olive oil
  • 1 --- free range egg
  • 300 grams whole or skim milk
  • 125 grams can of creamed corn
  • 3 --- spring onions
  • 150 grams shaved ham, sliced
  • 50 grams low fat grated cheese, or grate in TMX prior

Recipe's preparation

    Ham, Corn & Polenta Muffin
  1. 1. Preheat oven to 200 degrees.

    2. Place the spring onions in the Thermomix and chop for 3 seconds on speed 7. Remove and set aside.

    3. Put the polenta, sugar, flour, baking powder, oil, egg and milk in the Thermomix and combine for 20 seconds on speed 6.

    4. Add the creamed corn, spring onion, ham and cheese and combine on speed 4 for 30 seconds.

    5. Spoon the mixture into muffin tray and bake for 20 minutes in preheated oven 200 degrees.

     

    I sprinkled parmesan cheese on the top of each muffin prior to baking.

    I made these for lunch for some girlfriends who told me at the last minute they were coming. I had no ham so used bacon, had no spring onions so used chives, and I had some buttermilk left in a carton so decided to use that. The girlfriends were very impressed and so was I. Thank you Smile

    Had a great aroma but were far too dense. Were they supposed to be a light texture or quite heavy? Should I increase the amount of baking powder?

    we love this recipe - the whole family ... which is rare!! Thanks for an easy and tasty way to use up polenta. I add some extra chopped veges and leave out the ham (as we have a vegetarian in the house) but it's always delicious.

    Super easy and my fussy little guy loves them! 

     

    I replaced the spring onion and shaved ham with 50g diced bacon and they were perfect.

    Great recipe, i adapted it to include about 500-600g+ chopped up vegies, no corn, and used a combo of milled rice and chickpeas in place of regular flour, they turned out great! big hit - thanks for the inspiration tmrc_emoticons.) Cooking 7

    I've lost count of how many times i've made these now. I first printed off the recipe as a way to use up the polenta that was sitting in my cupboard, now i've bought more packs of polenta just for this recipe. I add 2tsp of baking powder to get some extra rise and fill the muffin tin to the top with the mixture.  Chopping up some sundried tomatoes with the springs adds extra flavour & colour.  I also prefer to use a piece of ham and dice it into pieces so there are chunks of ham throughout the muffin. These are a great savoury muffin!
