Ingredients

Jambalaya

  • 40 grams olive oil
  • 1 --- large red onion, quartered
  • 2 cloves garlic, peeled
  • 2 --- rashers of short cut bacon, chopped
  • 300 grams long grain rice
  • 1 --- red capsicum, quartered
  • 1 can diced tomatoes
  • 1 can chopped tomatoes
  • 1 dash Worcestershire sauce
  • 1 dash tobasco sauce
  • 1 pinch dried thyme leaves
  • 30 grams fresh parsley
  • 100 grams cooked peeled prawns

Recipe's preparation

    Jambalaya
  1. 1. Weigh 30g parsley and chop for 2 seconds on speed 7. Remove, set aside.

    2. Put in the capsicum and chop for 5 seconds on speed 5. Remove, set aside.

    3. Add the quartered onion and garlic and chop for 3 seconds on speed 7.

    4. Measure in 40g of olive oil and add chopped bacon and sautee 3 minutes at varoma temperature on speed 1.

    5.  Measure in 300g of long grain rice and sautee for a further 3 minutes at varoma temperature on speed 1.

    6. Put back in the red capsicum, the cans of diced tomato and chopped tomato, the worcestershire and tobasco sauces and thyme. Cook for 25 minutes at 100 degrees speed 1.

    7. Transfer to a large bowl, and stir through the prawns and parsley while hot.

Tip

I served it with a shredded BBQ chicken I bought from the supermarket. You can also julienne spring onions and sprinkle on top.
