- 80 g feta
- 1 egg
- 80 g oil
- 300 g Milk
- 360 g flour
- 1 tbsp baking powder

1. Preheat oven to 180C and grease muffin tray
2. Put vegetables in the bowl and chop 3sec/sp 6.
3. Add remaining ingredients and mix 5 sec/ sp 5. Scrap bowl and check if another mix is needed.
4. Bake for 25mins for large muffins but check after 20! Eat warm with a dash of butter spread on a cut half.

Tip
Use up whatever vegetables that are looking sad in your fridge. Sundried tomatoes are also great added to decorate

Turned out much lighter than I thought they would as the mix seemed heavy but like everyone says they are nice and fluffyand a good way to use up some dying vege in the fridge.
If making them for the not so little people in your life they need salt and pepper or chili flakes.
Lovely, light and tasty muffins. I added ginseng for extra flavour. I've made these a few times now with various vegetables. They freeze well and go well with relish and Greek yoghurt.
Kids were happy! I only had broccoli and cheddar cheese. kids gave thumbs up
Absolutely beautiful, I have a stash in my freezer, I thaw one out then heat it up with a bit of butter, yummy
Great recipe, thanks. I added some chia seeds and sun dried tomatoes in as well. My kids loved them. The feta gave a nice taste.
Yummy Savoury muffins!
Nice and fluffy everyone including the kids loved them! I used wholemeal flour and didn't have feta so used Parmesan instead
