Ingredients
Little Fingers Lunch Box Quiche
- 3.5 sheets Shortcrust Pastry, or make your own as per EDC
- 150 grams Cheddar cheese, grated
- 1/2 Spanish onion
- 1 clove garlic
- 5 eggs
- 250 grams Creamed Corn, tinned or as per recipe on RC
- 80 grams pure cream
- salt, to taste
- pepper, to taste
- paprika, sprinkle

- 1. Preheat Oven to 160 degrees celcius & Grease Patty Cake Pan
2. Defrost Shortcrust pastry or make as per EDC
3. Use round (or fluted as I did) cookie cutter to press out pastry, put in Patty Cake Pan.
4. Cut Cheese into small cubes and grate for 3 seconds, speed 8.
5. Put cheese aside.
6. Cut Onion in half, place onion and garlic in TM bowl and blitz for 5 seconds, speed 5.
7. Add Cheese, Eggs, Creamed Corn and Pure Cream to TM. Season with Salt and Pepper to taste. Mix for 10 seconds on speed 3.
8. Spoon mixture into the short cut pastry cups. Sprinkle with Paprika.
9. Cook in oven for 15-18 minutes.
10. Repeat steps 3, 8 and 9 until you're all out of pastry and mixture.
Tip
You could add bacon, capsicum, carrot, herbs the options are endless but my kids love the sweetness and simplicity of these.
These freeze really well and are defrosted by morning tea time for the kids to enjoy straight out of their lunch box.

Really easy and tasty. I made 6 in large muffin tins using spring onions as that is what I had. Did half with puff pastry. Will make again for sure.
I have been lazy and using pre made pastry but still taste so yummy. Both times i have made them have done batches of 70 to 100 each time
I rolled out my pastry rounds slightly to help fit better in the tin and it worked beautifully because the base wasn't just all pastry. I didn't bother blind baking. They worked really well! I would probably introduce more vegetables next time like capsicum and mushrooms or asparagus.

These were so delicious! All the family loved them. Hubby forgot to get them out the oven and they baked for 40 minutes, but were just perfect!
Delicious! I used light sour cream instead of pure cream and reduced fat short crust pastry to try and make them more of a healthy option. I took them to work for morning tea and there were none left!
So yummy! Made these this afternoon. Delicious..... Added a very small amount of bacon. Made in patty cake tin, because of the bacon, cooking time was a little longer.

I should clarify that I use a very shallow patty cake pan (the rounded type not a cupcake or muffin tin) which may account for the cooking time difference. I have also made using mini muffin pans which take roughly the same amount of time in my oven but the bigger you make them the longer they will take
