Low Carb Cheese and bacon Cauliflower muffins
- 350 grams cauliflower florets
- 260 grams cheese, (I used a mix of whatever was in the fridge, eg-Parmesan, Colby, mozzarella)
- 6 eggs, (large)
- 1/2 tsp Garlic powder
- 1/4 tsp salt, fine
- 1/4 tsp pepper, ground
- 100 grams bacon cubes, (bacon pieces, or chop your own)
- 1-2 stalks shallots, thinly slices (optional)

- • Pre-heat oven to 180°• Spray 12-hole silicon muffin pan with oil and set aside.
• Cut cheeses into 2cm cubes and add to the mixing bowl and grate it for 5 seconds/ speed 8.[/b] then transfer into a separate bowl and set aside.
• [/b]Add the cauliflower florets and blend it for 10seconds/ reverse "Counter-clockwise operation" speed 5.
[/b]• [/b]Set the cauliflower aside with the cheese.
[/b]• [/b]Add the eggs, garlic powder, salt and pepper to the bowl and mix for 20seconds/ speed 4.
• [/b]Add the cheese and cauliflower back into the bowl and mix for 10seconds/"Counter-clockwise operation" reverse speed 4.
[/b]• [/b]Next add the bacon bits and shallots (if using) and stir in with the aid of your spatula.
[/b]• Next scoop into the prepared muffin pan and bake for 20-30mins or until golden brown.

Tip
These are best straight from the oven and served warm but they also heat up nicely from being stored in the fridge.
