Ingredients

Pumpkin, Cheese & Bacon Scones

  • 500 grams pumpkin, Cubed (2cm)
  • 500 grams water
  • 100 grams tasty cheddar cheese, Cubed (2cm)
  • 3 Rashers of Bacon, Rind removed, chopped into 3rds
  • 550 grams Self Raising Flour
  • 180 grams Milk, Plus extra for brushing
  • Salt & Pepper, To taste

Recipe's preparation

  1. 1. Add 500g water to the bowl, place 500g cubed pumpkin into simmering basket and cook 20min/Varoma/Sp1. Needs to be cooked until tender, prolong cook time if necessary.

    2. Empty water from bowl and place cooked pumpkin in there, mash 10 seconds sp4. Place aside in another bowl to cool. Clean & dry mixing bowl.

    3. Preheat Oven to 220 degrees and line a baking tray.

    4. Place cheese and bacon into the mixing bowl, chop 6 seconds sp8. *See tips.

    5. Add SR flour, milk, cooled pumpkin and season to taste with salt and pepper.

    6. Combine 10 seconds sp4, scrape down sides of bowl with spatula and repeat (10 seconds sp4, scrape downs sides of bowl with spatula)

    7. Knead Function 40 seconds

    8. The dough will be sticky so ensure you tip out onto well floured work surface, flour your hands and also sprinkle some flour on top of the dough. Shape into a disc and then press out dough to a 2cm thickness, cut with a scone cutter and place on lined tray.

    9. Brush with milk and put in oven for 12-15 minutes until cooked. ** See tips

Tip

* If you would prefer chunkier bacon, dice yourself and omit from step 4 and instead add in step 5.
You can also set aside a small amount of the bacon/cheese mixture to sprinkle on top of your scones before baking.

**If you are adding some cheese and bacon on top of the scones brush with milk first and then add.
