Ingredients

Pastry

  • 90 g Butter, cubed
  • 180 g Strong Flour
  • 2 egg yolks only
  • 1 tsp Sugar.
  • 1 tsp Salt.
  • 1 tbsp Water., if needed

Egg Main

  • 5 eggs whole
  • 300 gram Cream or Creme Fraise
  • 1 tsp Salt.
  • 1 tbsp Pepper.
  • 400 g Diced bacon

Cheese

  • 50 g Gruyere
  • 50 g Emmental

Recipe's preparation

    Quiche Lorraine
  1. Chop 50g of Emmental and 50g of Gruyere 10 sec/speed 7 and set aside

  2. Using a buttered 10 inch dish. To make the pastry. Put all pastry ingredients into the TM bowl and 30 sec/speed 4. Turn out onto board, roll between 2 sheets of greaseproof or parchment (probably around 3mm thick or bigger than the dish) Take off one sheet of parchment, put the dish upside down onto the pastry and flip over. Using the parchment, push the pastry into the corners of the dish and remove the parchment. Take off any overlapping pastry and patch up what's missing on the sides. Brush with egg white and place in the fridge

  3. Gentle stir setting"Gentle stir setting" Cook the 400g diced bacon in the TM bowl, saute 6 mins/120 deg/Speed 1 and set aside

  4. Put all the Egg Main ingredients (except the bacon) into the TM5 bowl and 30 seconds/speed 4, spread bacon onto the pastry base, add the cheese to the Egg Main and pour onto the bacon. The chopped cheese will be at the bottom of the bowl, make sure you get it all out! Grate a little more cheese on the top, a little pepper and cook in a pre heated oven 150 deg C for 35 mins. It should look brown around the edges and be a little "wobbly" when you shake it. This is ok and should be perfect when it's cooled down

    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
