Aunty Lois Diabetic Fruitcake

  • 100 g dried apples
  • 100 g dried apricots
  • 100 g Dried peaches
  • 100 g sultanas
  • 100 g dried cranberries
  • 300 g freshly squeezed orange juice
  • 125 g walnuts
  • 125 g almonds
  • 250 g self-raising flour
  • 1 level tsp ground cinnamon
  • 1 level tsp mixed spice
  • 1/2 level tsp Nutmeg
  • 2 level tbsp smooth apricot jam
  • 1 level tbsp orange juice, extra for glaze
  • 30 g almonds, toasted for decorating
  • 30 g pecans, toasted for decorating

Recipe's preparation

    Fruit preparation
  1. freeze fruit for min 2 hours to prevent clumping when chopping
    chop walnuts 3 sec/speed 4 check if require more do it again if needed place in a bowl reserve for later no need to clean bowl
    Chop almonds 5sec/speed 7
    weigh flour and spices, mix 5 sec/speed 2Counter-clockwise operation"Counter-clockwise operation" remove Closed lid"Closed lid" swap to second Closed lid"Closed lid"
    weigh apples,peaches and apricots chop 6 sec/speed 9
    add saltanas, cranberries
    add nuts mix speed 2 Counter-clockwise operation"Counter-clockwise operation" /15 sec
    add orange juice stir through wuith spatula
    cook 8 min/100c/speed 1Counter-clockwise operation"Counter-clockwise operation"

    add all dry ingredients to fruit and mix with spatula until combined you may need a little extra orange juice.

    mix with spatula assistance for 15 sec Counter-clockwise operation"Counter-clockwise operation" speed 4

    when all Igredients are combined put in a 20 cm square tin double linened with baking paper.
    cook on 140c fan forced for 1-1/1/2 hours or until cooked
    when cooled use a large cookie cutter i use at 9com round and cut into 4 individual xmas cakes

    Combined apricot jam and extra orange juice glaze top of each fruit cake and decorate with toasted almond or pecans

    dont through out left overs check out left over fruit cake plum pudding truffles

Tip

Freeze fruit for 1 hour before chopping this will prevent clumping.
Soak fruit in orange jiuce over night instead of cooking fruit for 10 min 100c Counter-clockwise operation"Counter-clockwise operation" 1

I make 4,9cm individual round christamas cakes with this recipe after cake is cooked I use a 9cm round cookie cutter
