Ingredients

Dough

  • 300 grams raw almonds
  • 50 grams Psyllium husk
  • 2 tsp GF baking powder
  • 1 tsp salt
  • 5 egg whites
  • 40 grams apple cider vinegar
  • 400 grams Boiling water
  • 100 grams currants
  • 100 grams sultanas
  • 20 grams mixed peel
  • 1 tsp cinnamon, Ceylon
  • 1 tsp ground nutmeg
  • 1/2 tsp ground cloves

Cross

  • 50 grams gluten free flour
  • 50 grams water

Glaze

  • 50 grams orange juice
  • 50 grams caster sugar

Recipe's preparation

    Best Ever Gluten Free Hot Cross Buns
  1. Preheat oven to 180 degrees and line a baking tray with baking paper
    Add Almonds and Psyllium husk to dry bowl and mill 10 seconds speed 9
    Add remaining dry ingredients and mix 10 seconds reverse speed 4
    Add egg whites and vinegar, knead 20 seconds
    Add Boiling water and knead 1 minute
    Dough will be sticky but workable (I find it easier using damp hands), divide and roll into 12 portions
  2. To make the cross put the ingredients into the bowl and mix 5 seconds speed 5 or until smooth. Put into piping bag with 5ml nozzle and pipe onto buns
    Bake for 50-60 minutes or until they sound hollow when tapped on the bottom
  3. For the glaze put the ingredients into the bowl and cook for 2 minutes, varoma temperature, speed 2 without the MC and then brush onto hot buns

Tip

Leave off the cross and these buns can be made all year round!
Play around with cocoa and choc bits to make chocolate hot x buns

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31).
