Ingredients

Carrot Cake/Muffins

  • 450 g carrots, Cut into 2-3cm pieces
  • 3 eggs
  • 1 tsp vanilla essence
  • 70 g brown sugar
  • 100 g golden syrup
  • 100 g extra virgin olive oil
  • 220 g plain flour
  • 2 tsp baking powder
  • 1/2 tsp cinnamon

Recipe's preparation

  1. Preheat oven to 180C.

  2. Prepare cake tin or muffin tin.

  3. Place carrots into bowl (cut into 2-3cm pieces) and grate 8 seconds, speed 6 (may need a further 2 seconds). Remove and place in a separate bowl.

  4. Without cleaning bowl, add eggs and vanilla essence,

  5. Add brown sugar and mix 15 seconds, speed 4 with lid and MC on.

  6. Place golden syrup into bowl,

  7. Place extra virgin olive oil and mix for 20 seconds, speed 4 with lid and MC on.

  8. Add in plain flour,

  9. baking powder and cinnamon and mix for 5 seconds, speed 4 with lid and MC on.

  10. Place grated carrots back into mixture, and mix for 2 seconds, speed 6. Fold in remainder carrot with spatula.

  11. Bake in muffin tray for roughly 12-14min (check skewer to ensure muffins are cooked). Or bake as a cake 25-40mins depending on size of tin.

  12. Eat as is or make some cream cheese frosting. These freeze well, perfect to add to your childs lunch box before school.
