Ingredients

Chocolate avocado cake: batter

  • 200 g Pitted Dried Dates
  • 250 g water
  • 1 tsp bicarbonate of soda
  • 100 g avocado, Peeled, pitted and chopped
  • 60 g Maple syrup
  • 1 tsp vanilla
  • 2 eggs
  • 30 g neutral oilsunflower or canola
  • 210 g self-raising flour
  • 30 g Cacao or cocoa powder
  • 60 g Yogurt

Chocolate ganache

  • 100 g broken into squares
  • 80 g cream
  • Fresh Raspberries, To decorate

Recipe's preparation

    How to:
  1. Cake batter:

    Preheat the oven to 180°C/ 160°C FF
    Grease and line a loaf pan.


    1. Place dates and water in Closed lid"Closed lid" , 4-5mins/Varoma/Gentle stir setting"Gentle stir setting" , or until boiling.

    2. Stir in bicarb using the spatula. It will froth. Leave in the Closed lid"Closed lid" until it reaches room temperature.

    3. Add the remaining ingredients in the order listed and blend 45secs/sp4, or until well blended.

    4. Spread into the prepared tin and bake 45-50mins o. Until cooked when tested.

    5. Leave in the pan for 10mins before cooling on a wire rack.

    Chocolate ganache:

    1. Place chocolate into mixing bowl and grate 10 sec/speed 8. Scrape down sides of mixing bowl with spatula.

    2. Add cream and heat 2 min/50°C/speed 3. Allow ganache to cool slightly and thicken. Spread over cooled cake.
