Ingredients

Cake

  • 125 grams cream cheese, softened
  • 250 grams Butter, softened
  • lemon or orange rind, strips
  • 330 grams castor sugar
  • 3 eggs
  • 240 grams plain four

Icing

  • 130 grams icing sugar
  • 2 teaspoons lemon juice, approximately

Recipe's preparation

    Cake
  1. Grate lemon or orange rind strips, speed 9, 30 seconds.  

  2. Add cream cheese and butter and mix on speed 5, 20 seconds.

  3. Add castor sugar and eggs and mix on speed 5, 10 seconds.

  4. Add plain flour and mix on speed 6, 30 seconds.

  5. Pour into well-greased 20cm baba tin and bake at 180 degrees for 30 minutes, then reduce temperature to 160 degrees and bake a further 30 minutes.

  6. Turn out onto wire rack and when cold drizzle decoratively with icing.

  7. Icing
  8. Mix icing sugar and lemon or orange juice, speed 5, 20 seconds.  It should be a runny consistency so as to drizzle over the cake, adjust accordingly with extra juice or icing sugar if needed.

Tip

A fabulous and tasty cake served on its own or serve with ice cream or custard and use as a dessert.  

This cake freezes well.

When removing batter from TM bowl, get out as much as you can (don't worry about the blades), then pop TM lid back on and whizz for two seconds on speed 8, everything around the blades will splay out to the side, which can then be removed with your spatula.  Don't forget your spatula is shaped to fit the contour of your TM bowl perfectly and allows you to remove what may be left behind on the bottom of the bowl.
