Ingredients

  • 1 onion, peeled and halved
  • 20 g Butter
  • 1.5 tsp mild or medium curry paste
  • 600 g pumpkin, roughly chopped
  • 400 g cauliflower, roughly chopped
  • 1.5 tbsp Vegetable Stock Concentrate (EDC)
  • 500 g water

Recipe's preparation

  1. Place onion in mixing bowl and chop 5 sec/speed 7.

  2. Add butter and curry paste to mixing bowl and cook 3 minutes/Varoma/Speed 1.

  3. Add pumpkin and cauliflower and chop 15 sec/speed 6.

  4. Add vegetable stock concentrate and water and cook 20 mins/100°C/Speed 2.

  5. Blend slowly from Speed 1 to Speed 9 over a 1 minute period.

  6. Serve with cracked black pepper and a dollop of cream or sour cream.

Tip

Remember to make a lovely bread dough first, so you can serve crunchy slices of bread or soft bread rolls with your soup.

    Tweaked as per the comments i.e. added bacon, used curry powder, 250g pumpkin and 259g sweet potato and served with crepe fraiche and fresh bread rolls gold 🌟

    I used Babas curry powder and it turned out quite salty. Kids still enjoyed it tho, and it’s a great way of using up leftover vegetables. Thankyou.

    Very yum and easy. I used curry powder, but put too much in, so added half a can of coconut milk to tame it down. I used more cauliflower than pumpkin because I didn't have enough pumpkin. Cooked bacon pieces or prochutta would be good on top too.

    This was very tasty! I didn't have any curry paste handy so used 1tsp curry powder. Dollop of light cream cheese on top and cracked black pepper was extra yum  tmrc_emoticons.)

    Yum, very nice, i added a couple of bacon rashers with the onion.  I didn't have much in the way of curry paste, so just used a teaspoon of curry powder. Thank you tmrc_emoticons.)

    Loved this!!!  I used other vegies i had in the fridge (carrot, celery) as well as pumpkin and added bacon in step 1 and it tastes yummm!! thanks for sharing!

    Made this tonight. I used what I had in the frig which was 500 of cauliflower and 500 of pumpkin, and 1 tablespoon of Korma Curry Paste by ThermoGoss which I keep in my freezer (on recipe community) + Veggie Stock Concentrate. Sprinkled with sweet paprika and served with a dollop of my Thermomix yogurt. Nice flavour and a lovely thick soup. Made a great change from the standard pumpkin soup.

    Lovely thick soup that is easy to make and very similar to pumpkin soup. My two little girls enjoyed it too!
