Ingredients

  • 1 large onion quartered
  • 2-3 cloves garlic
  • 2 cm piece of ginger
  • 20 grams olive oil
  • 1 tablespoon red curry paste
  • 1 tablespoon tomato paste
  • 750 grams chicken breasts, cubed
  • 400 ml can coconut milk/cream
  • 400 grams Fresh or Tinned Tomatoes
  • 1 tablespoon brown sugar
  • 2 tablespoon fish sauce
  • handful fresh coriander or basil leaves, chopped

Recipe's preparation

  1. Add onion, garlic and ginger to TM bowl.  Chop for 5 secs/speed 7.

  2. Add olive oil and saute for 2 mins/100 degrees/speed softGentle stir setting"Gentle stir setting" .

  3. Add red curry paste, tomato paste and cubed chicken and cook for 2 mins/100 degrees/reverseCounter-clockwise operation"Counter-clockwise operation" /speed softGentle stir setting"Gentle stir setting" .

  4. Add coconut milk/cream and cook for 10 mins/100 degrees/reverseCounter-clockwise operation"Counter-clockwise operation" /speed softGentle stir setting"Gentle stir setting" .

  5. Add tomatoes, brown sugar, fish sauce and fresh herbs and cook for a further 5 mins/100 degrees/reverseCounter-clockwise operation"Counter-clockwise operation" /speed softGentle stir setting"Gentle stir setting" .

Tip

Serve with jasmine rice to absorb the excess juice.  Garnish with extra coriander or basil leaves.

The kids love this recipe as it's quite mild.

    I added some stir fry vegetables to the dish to bulk it out a bit. Next time I will add more red curry paste and may maybe a couple of chillis as we like it spicier

    After reading other comments I decided to add just 200ml of coconut cream which was just right I think

    Lovely to hear that your whole family enjoyed the recipe.  Great idea to increase the quantity of chicken and veg.  You may wish to increase the cooking time, just be sure to check on the chicken and veg if you do.

    Me and my family loved that dish!

    that was my first dish with my new Thermomix. My two year old likes it a lot.

    There is definitely too much sauce, so will add some more chicken and veggies next time tmrc_emoticons.;)

    I followed comments and used 2 tablespoons of tomato paste and curry paste.  i didn't have ginger so used 1/8 teaspoon of ginger powder.  Will use fresh ginger next time.  This is a delicious recipe and kids loved it.

    Very tasty, but yes, too much liquid. I will halve coconut milk next time. I added some capsicum too. I also used the butterfly so the chicken wouldn't shred and it was perfect. Will make again.
