Ingredients
- 110 grams Butter
- 220 grams brown sugar
- 1 egg
- 200 grams pumpkin, cooked and drained
- 130 grams plain flour
- 65 grams Self Raising Flour
- 1 teaspoon cinnamon
- 1/2 teaspoon each of ginger, all spice, bicarbonate of soda
- pinch salt
- 60 grams currants
Passionfruit Icing
- 130 grams raw sugar, white sugar or icing sugar
- pulp of 2 passionfruit
- 30 grams Butter, at room temperature

Place butter and brown sugar in TM Bowl and cream Speed 4/30 seconds.
Add egg and cooked pumpkin to TM bowl and mix Speed 4/10 seconds.
Add flours, spices, bicarb and salt to TM bowl and mix Speed 5/10 seconds.
Remove lid and scrape down sides. Add currants to TM bowl and replace lid and mix on "Dough mode" Interval/12 seconds.
Spoon mixture into a greased 20cm x 30cm baking tin and bake for 20 minutes at 180 degrees. When cool spread with passionfruit icing.
Place sugar in TM bowl and if using raw or white sugar, mill Speed 9/10 seconds. Add butter and passionfruit pulp and mix Speed 5/30 seconds. If icing is not at a spreadable consistency add a couple of drops of water till desired consistency is achieved.

This is an amazing slice!! 🤤 super easy to make, cooked up beautifully, beautiful colour and tastes so incredible...thank you so much for sharing! 🤩 Thankfully I had a *slightly* outdated packet of currants in the pantry. Unfortunately no passionfruit on the vine right now for the icing, but will be making this recipe again (and again!!) thank you SO much for sharing.
