Dascha's Ultimate Brioche Hot Cross Buns

  • 30 grams Rum
  • 150 grams sultanas
  • 100 grams currants
  • 130 grams Butter, cut into pieces, plus extra to grease
  • 200 grams Milk
  • 50 grams sugar
  • 2.5 teaspoons dried yeast
  • 2 eggs
  • 500 grams bakers flour, plus extra to dust
  • 2 tablespoons ground cinnamon
  • 1.5 teaspoons Ground Coriander
  • 1.5 teaspoons ground nutmeg
  • 1.5 teaspoons ground ginger
  • 1 teaspoon ground cloves
  • 50 grams mixed peel
  • 1 pinches salt
  • 50 grams water
  • 40 grams plain flour
  • 1 pinches salt
  • 40 grams water
  • 1 teaspoons olive oil
  • 40 grams caster sugar
  • 40 grams water

Recipe's preparation

    Brioche Hot Cross Buns
  1. 1. Place a bowl onto mixing bowl lid and weigh sultanas, currants and rum into it, then set aside for 12 hours.

    2. Grease a large mixing bowl with butter and set aside.

    3. Line 30 x 40 cm baking tray with baking paper or baking mat and set aside.

    4. Add sugar, yeast, milk and water into mixing bowl and heat 3 mins/37C/sp2.

    5. Add eggs, flour, cinnamon, coriander, ginger, nutmeg, cloves and salt, then mix 20 sec/speed 3, then knead DoughDough mode"Dough mode" /5 min.

    6. Knead for a further Dough Dough mode"Dough mode" /2 min, adding the reserved butter 1 piece at a time through hole in mixing bowl lid.

    7. Place dough on a lightly floured silicone bread mat or work surface.

    8. Press dough out to flatten, then sprinkle with the reserved sultanas, currants and the mixed peel and knead until fruit is incorporated.

    9. Place dough in prepared bowl, cover with a silicone bread mat or a tea towel and set aside in a warm place to prove until doubled in size (approx. 1-1.5 hours).

    10. Clean and dry mixing bowl

    11. Divide dough into 12 equal-sized pieces (approx. 100 g) then form into a bun and place them 3 cm apart on prepared baking tray.

    12. Cover with a tea towel and set aside for 30 minutes.

    13. Meanwhile, continue with the recipe.

    14. Preheat oven to 200°C.

    15. Place a bowl onto mixing bowl lid and weigh flour and water into it. Add oil and salt and mix until smooth.

    16. Pour into a piping bag with a nozzle (10 mm - see Tips) and pipe crosses onto the top of the reserved buns.

    17. Bake hot cross buns for 20 minutes (200°C) until golden brown.

    18. Place water and sugar into mixing bowl and cook 2 min/100°C/speed 2.5, without measuring cup.

    19. Brush sugar syrup onto the buns while still warm.

    20. Allow to cool on the tray for 10 minutes, before transferring onto a wire rack.

    21. Serve fresh or toasted, with butter.

Tip

Sultanas and currants do not need to be soaked in rum overnight, we do this as it makes the fruit plump and tasty. We like a spice and fruit filled bun - if that's not you, you won't like these! Dark chocolate chunks can be added but they are delicious without.

I've resisted the opportunity to replace the photo with one of the crosses perfect on the top. Hot cross buns are for celebrating Easter. Easter is a great reminder that perfection is not required.
