Ingredients
Biscuit
- 240 g Butter
- 240 g flour
- 120 g castor sugar
- 120 g rice flour
- 1/2 teaspoon cinnamon
- 1/2 teaspoon mixed spice
- 1/4 teaspoon ginger
- 100 g sultanas
- 100ml --- orange juice
Crosses
- 60 g Butter
- 60 g flour
- 30g g castor sugar
- 30 g rice flour

Overnight: Cover sultanas with orange juice and let them sit in the fridge.
1. Place butter in your TM bowl and mix on speed 5 for 10 seconds until smooth.
2. Add all other dry ingredients to SM bowl and mix on speed 5 for 10 seconds - scrape down bowl and mix for another 15 seconds on speed 5.
3. Drain excess orange juice from sultantas and stir through mixture carefully not to break them.
4. Make small balls outs of mixture, placing them on a lined baking tray. Once complete put in the fridge while you make the crosses.
CROSSES
1. Place butter in your TM bowl and mix on speed 5 for 10 seconds until smooth.
2. Add all other dry ingredients to SM bowl and mix on speed 5 for 10 seconds - scrape down bowl and mix for another 15 seconds on speed 5.
3. Carefull roll the dough into thin strips - I found I only needed about a 10c peice of dough for each strip - rolling it out with one finger in the palm of my hand.
4. Place the crosses on each biscuit and bake for 20minutes at 180 degrees.
