Ingredients
Italian Berry Crostata
- 160 g raw sugar
- 200 g plain flour
- 150 g unsalted butter, chilled, cut into cubes
- 100 g sour cream
- 250 g strawberries, hulled
- 125 g raspberries
- 30 g cornflour
- 1 pinch ground cardamom
- 1 egg yolk, beaten
- 200 g thickened cream (chilled), for serving
- 250 g blue berries

Preheat oven to 200 C
2. Mill sugar 5 secs speed 7; leave 50 g in bowl of TM & reserve the rest for later.
3. Add flour & butter to bowl; mix 5 seconds speed 6 until crumbly.
4. Add sour cream, mix on Interval speed approximately 15 -20 seconds until mixture just comes together. Shape into a disc, place in plastic bag and refrigerate for 20 mins.
5. Place berries, 100g sugar, cornflour & cardamom into unwashed bowl; mix gently until combined approximately 5 seconds, Reverse, speed 2
6. Roll out chilled dough between 2 layers of baking paper until approx 40 cm diameter. Pile berries into the centre, leaving an 8 cm border around edge. Gently fold in the edge of the pastry to partly cover the berries. Brush the pastry with beaten egg & sprinkle with remaining sugar.
7. Carefully slide the crostata, with the baking paper, onto the preheated oven tray & place into the oven. Bake approx 1 hour unti pastry is golden & crisp.
8. Drizzle with cream to serve

You have to try this tart - it is fantastic!! The pastry is to die for and the sourness of the berries is so refreshing - definitely making this one over and over again!
