Ingredients
Base
- 140 g unsalted butter, cubed
- 210 g plain flour, or gluten free plain flour
- 5-10 g baking powder
- 60 g brown sugar
Caramel
- 180 g unsalted butter, Cubed
- 125 g water
- 180 g raw sugar
- 110 g milk powder
- 60 g golden syrup
- 1 pinch salt
Anzac Crumble Topping
- 50 g unsalted butter
- 40 g rolled oats
- 40 g brown sugar
- 40 g Desiccated Coconut, or Shredded Coconut

- Preheat Oven to 180 degrees celsius
- Line a baking slice tray tin with baking paper
- Add 140g Unsalted Butter to the bowl
- Put your measuring cup and lid on the bowl
Melt Butter for 3mins/60°C/Sp2 - Use your spatula to scrape down the sides of the bowl.
- Add 210g plain flour
- Add 5-10g of Baking Powder
- Add 60g Brown Sugar to the bowl
- Put your measuring cup and lid onto the bowl
- Mix for 30 Seconds/Speed 3
- Press the base ingredients into the slice tray evenly.
- Bake in the oven for 15mins at 180°C
- Set aside for 5-10 minutes to cool.
- Place 40g Unsalted Butter in the bowl
- Add 125g water
- Place the simmering basket on the lid of the bowl
- Heat for 3mins/120°C/Speed 2 (or if you are a TM31 user pop it on Varoma Temperature)
- Add 180g Raw Sugar to the bowl
- Add 110 Milk Powder to the bowl
- Add 1 pinch of salt and then put the lid on the mixing bowl with the measuring cup.
- Mix for 30 sec/ Speed 10
- Add 140g Unsalted Butter to the bowl
- Add 60g of Golden Syrup
- Place Lid and Measuring Cup onto the Mixing Bowl and Cook for 5 mins/ 50°C / Speed 3
- Pour over the base and set aside to cool for 5-10 minutes.
- Wash your bowl (on the TM6 use your PreClean Mode) or use your spare Bowl
- Add 50g Unsalted Butter and melt for 2 mins/60°C/Speed 2
- Add 40g of Rolled Oats to the Mixing Bowl
- Add 40g of Desicated or Shredded Coconut to the Mixing Bowl
- Add 40g of Brown Sugar and add the Lid with the Measuring Cup to the Bowl
- Mix for 20 Sec/"Counter-clockwise operation" /Speed 2
- Spread the Crumble Topping over evenly over the caramel and base.
- Bake for a further 30 mins.
- Turn the Baking Slice Tray around and cook for a further 10 minutes or until it is golden and brown and the caramel seems to of set (it will continue to set as it cools).

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
