Ingredients
Dough
- 110 g sultanas
- 110 g raisins
- 40 g Butter, chopped
- 145 g water
- 175 g SR flour
- 1/4 tsp bicarbonate of soda
- 1/2 level teaspoons salt
- 110 g Dark Brown Sugar
- 1 egg
- 1 tablespoons Malt Extract, see photo
- 1 tablespoons golden syrup
- dash vanilla extract

- Preheat the oven to 180°C and grease and line a small-medium size loaf pan.
1. Add dried fruit to the "Closed lid" , along with the butter and water.
2. Set to Varoma/5mins/sp"Gentle stir setting" .
3. Then set to 100°C/5mins/sp"Gentle stir setting" .
4. Set aside to cool slightly.
5. Add the SR flour, Bicarb, salt and sugar to a medium sized mixing bowl and blend with a whisk.
6. in a small cup, whisk together the egg, malt extract, Golden syrup and vanilla, then tip into the dry ingredients.
7. Add the fruit mixture and stir gently to combine.
8. Spread evenly into the prepared tin and bake for 35-45 minutes until golden and cooked when tested. Leave in the tin before turning out to cool on a wire rack.
9. Serve sliced and spread generously with butter.
How to:
Tip
Soooo delicious with a good cup of tea.
Slathered with butter of course..
Keeps well and freezes well also.
