Ingredients
Dough
- Zest of ½ lemon or lime, optional
- 1 heaped teaspoon dried instant yeast, or 40g fresh yeast
- 250 grams Milk, or buttermilk
- 2 teaspoons salt
- 500 grams bakers flour
- 50 grams caster sugar
- 70 grams Butter
- 1 egg
- 1 heaped teaspoon cinnamon, ground
- 1/2 teaspoon Cloves, ground
- 1 heaped teaspoon nutmeg, ground
- 100 grams sultanas
- 70 grams currants

Place zest (if using) into mixing bowl and mill 10 sec/speed9. Set aside
Place milk and yeast into mixing bowl and heat
1 min/37deg/speed1
Add flour, salt, butter, sugar, egg, cinnamon, nutmeg and cloves and mix 6 sec/speed7 then knead 2-3 min
Add sultanas, currants and reserved zest (if using) and combine 10-15 sec/reverse/speed 5
Spoon into silicon cupcake moulds or 20cm round spring form pan and allow to rest in warm place covered with tea towel for 30-40 minutes then place in Varoma dish
Rinse bowl and fill with 500ml water
Place sheet of baking paper over the top of bread to prevent moisture dripping and steam 20-25 minutes/Varoma/speedfor cupcakes OR 30-40 minutes/Varoma/speed 2 for cake tin.
Serve with freshly made quince paste or good ‘ol Thermomix butter. Enjoy!
