Ingredients

Red velvet cupcakes

  • 250 grams plain flour
  • 1.5 tablespoon cocoa powder
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 200 grams raw sugar
  • 100 grams soft butter
  • 2 eggs
  • 2 tsp vanilla extract
  • 1 tablespoon Red food colouring
  • 110 grams buttermilk, (half a cup)
  • 1 tsp cider vinegar (or vinegar)

Recipe's preparation

    Red velvet cupcakes
  1. Preheat oven to 170 degrees celcius and line muffin tins with cupcake liners.

  2. Add the raw sugar to the bowl and mill for 10 secs on Speed 9.

  3. Insert Butterfly and add soft butter. Cream for 30 secs on speed 4/5. Scrape down sides and repeat.

  4. Add in both eggs and mix on speed 4/5 for 30 secs. Scrape down sides and mix  on speed 4/5 for 1 minute.

     

  5. Add vanilla and colouring and mix for 30 seconds on speed 4.

  6. Add dry ingredients and mix for 30 seconds on speed 4.

  7. Add buttermilk and vinegar and mix for 20 secs on speed 4.

  8. Remove butterfly and pour batter into cupcake liners (about half filling each)

     

  9. Bake for 17-20 minutes at 170 degrees celsius.

    Frost with cream cheese icing when cooled.
