Ingredients

Biscuit base and top

  • 2 x 200 gram packets Lattice biscuits

Salted cheesecake filling

  • 750 grams Cream Cheese, Cubed
  • 175 grams brown sugar
  • 1 tablespoon golden syrup
  • 3 teaspoons vanila extract
  • 3 eggs
  • 1 teaspoon sea salt flakes

Brown butter icing

  • 80 grams unsalted butter
  • 175 grams icing sugar, sifted
  • 1 teaspoon vanilla extract
  • 1-2 tablespoons Milk

Recipe's preparation

    Biscuit base
  1. 1. Line the base of a 20cm x 30cm slice tray with non stick baking paper.

    2. Place Lattice biscuits ( sugar side down) to fit base of tray. You may need to trim some to fit.

    3. Set aside and leave remaining biscuits for the top.

     

  2. Filling
  3. 1. Place cream cheese, sugar, golden syrup,and vanilla into the Closed lid"Closed lid" .

    2. Whizz sp5 / 1 minute. Scrape and repeat for 20 seconds.

    3. Add the eggs and salt.

    4. Beat sp 4.5 / 20 seconds.

     

  4. Assembly
  5. 1. Pour the prepared mixture carefully over the biscuit base to cover. Spread evenly.

    2. As before, cut  the biscuits to fit the top this time, sugar side up.

    3. Bake in a preheated (180C) oven for 40-50 minutes or until just set.

    4. Leave in the tin to cool slightly and prepare the icing.

  6. Brown butter icing
  7. 1. Place chopped butter into a small saucepan.Melt butter over a med heat until it starts to brown. Watch it carefull, swirl the pan. You don't want it burnt.

    2. Tip butter into a small bowl, leaving the bits at the bottom behind.

    3. Sir in sifted icing sugar and enough milk to form a slightly "cream like" pouring consistency.

    4. Drizzle over the top of the slice and set in the fridge for an hour or so until cold.

    Slice and serve..

     

Tip

This is my variation on Donna Hay's "Salted caramel cheesecake sandwiches".

I added the Brown butter icing but you can make it without if you prefer.

    Very nice indeed. Got better with age, kept in fridge for a few days. Would love to have a go at it without baking, as in adding gelatine, only because the flavour out of the bowl before baking was to die for. Any idea how much gelatine I'd need to add

    Turn it into a dessert with a berry coulis and whipped cream.

    Little tip, icing can be halved if you want to just drizzle it over the top, there'll still be plenty. Cheers
