Ingredients

BASE

  • 1 level tsp lemon rind
  • 180 g SR flour
  • 50 g walnuts
  • 200 g Dried Dates
  • 125 g Butter, chopped
  • 170 g brown sugar
  • 80 g golden syrup
  • 1 egg (lightly beaten)

Chocolate topping

  • 100 g dark chocolate

Caramel sauce

  • 80 g unsalted butter chopped
  • 130 g thick cream
  • 50 Dark Brown Sugar
  • 50 Maple syrup
  • 2 level tsp Vanilla Bean Paste
  • 1 level tsp salt
  • 70 g bourbon (optional)

Recipe's preparation

    BASE
  1. 1. Set oven to 180C and line 25x15cm pan with bake paper
    2. Place lemon rind into Closed lid"Closed lid" , lid on and turbo x 2 or 15s/ sp10
    3. Add in dates Chop 10s/sp5 Scrape down the sides of the Closed lid"Closed lid"
    4. Add in walnuts Chop 10s/sp5
    5. Stir in flour 10s/sp4/Counter-clockwise operation"Counter-clockwise operation" . Set this mix aside in separate bowl.
    6. Add butter, brown sugar and golden syrup to Closed lid"Closed lid" Stir 5s/sp5
    7. Melt 3m/90C/sp2.....Cool in Closed lid"Closed lid" till 37C
    8. Add egg to cooled butter mix 5s/sp5
    9. Add flour Mix into butter mix Stir 10s/sp2
    10. Pour mix into pan, cook for 25 - 30 Minutes or until firm to touch. Cool in pan.
  2. Chocolate Topping
  3. 1. Place chocolate in Closed lid"Closed lid" and chop 5s/sp8
    2. Melt 3m/40C/sp2
    3. When melted pour into plastic piping back and drizzle over the top of the slice base when the base has cooled.
  4. Caramel Sauce
  5. 1. Place all ingredients into theClosed lid"Closed lid" and cook 7-9m/varoma/sp2
    2. When sauce is thick, place simmering basket onto Closed lid"Closed lid" lid.
    3. Serve warm over slice, then transfer into a sealable container and allow to cool before placing in fridge.
