Ingredients

BASE

  • 90g Butter
  • 2tbsp caster sugar
  • 3/4C plain flour
  • 1/3C cornflour

LEMON FILLING

  • 2x400g condensed milk
  • 4 eggs - each separated
  • 2tsp Grated lemon rind
  • 3/4C lemon juice

TOPPING

  • 4 egg whites
  • 3/4Cup castor sugar
  • 1/2C flaked coconut
  • pinch of salt

Recipe's preparation

    BASE
  1. 1. Grease and line 16x26cm pan, Set oven 180C
    2. Add butter and sugar to Closed lid"Closed lid" ...2m/sp4...repeat.
    3. Gradually add sifted flour and cornflour, KNEAD 5m/..Dough mode"Dough mode" ......
    4. Spread over base of pan, BAKE for 15min
  2. LEMON FILLING
  3. 1. In a clean Closed lid"Closed lid" add in lemon rind TURBO x 4, scrape down the sides of the Closed lid"Closed lid" ADD IN condensed milk, egg yolks, lemon rind and juice ....10s/sp4..scrape down sides and repeat 10s/sp4.
    2. Pour over base, BAKE further 15 min
  4. TOPPING
  5. Blend"Blend" 1. In a VERY CLEAN and DRY Closed lid"Closed lid" Mill Sugar 10s/sp10 place in separate bowl then
    2. insert butterfly whisk and
    ADD egg whites and salt 4m/sp3 without MC or until soft peaks form
    2. Gradually add extra sugar 1 tsp at a time 4m/sp3 without MC

    3. SPREAD over baked lemon filling, sprinkle with coconut flakes and BAKE a further 10 -15 min or until golden brown, cool in tin before cutting

    Flavours were great, I decided to make individual pieces in a muffin tin (makes a total of 18 individual). Baking times supplied but no temperatures. Tried to get them out and all but 6 disintegrated. I don't think I'll waste my time with this again.

    Made this today .... didn't have any condensed milk... so I made some ... so easy

    Will do the meringue part tomorrow
