  • 60gm lemon juice
  • 60gm unsalted butter
  • 110gm white sugar
  • 1 egg

Cake batter

  • 300gm SR flour
  • 120gm unsalted butter
  • 110gm sugar
  • 2 eggs

Recipe's preparation

    Lemon curd
  1. Preheat oven to 180C and line a 20cm springform cake tin.
  2. Add all lemon curd ingredients into the Thermomix bowl and cook for 5 minutes, 100 degrees, speed 4.
  3. Remove from bowl and set aside to cool.
  4. Cake batter
  5. Without washing the bowl, place all cake batter ingredients into the Thermomix bowl and mix for 10 seconds, speed 5.
  6. Scrape down the sides of the bowl and repeat twice.
  7. With wet hands, press half of the cake batter into the cake tin.
  8. Spread the cooled lemon curd over the cake batter.
  9. Roll the remaining cake batter into balls and arrange on top of the lemon curd.
  10. Bake in pre-heated oven for 25-30 minutes.
  11. Serve warm with cream or icecream.
  12. Enjoy!

    Too much cake for me - the original is better I think as lots of lemon curd which of course is the best part! I do double the original recipe and cook in a 22 cm springform tin.

    So easy and so good! Made it on a winters day and served it warm with ice cream for dessert. My kids love a good dessert and this received a 100/10 from all 4 kids and the hubs. I did reduce the sugar a little, and used raw sugar instead of white as it was what I had. I don't think this negatively impacted on the result as it was awesome tmrc_emoticons.)
