Ingredients
Vegan Chocolate chip cookies
- 1 cup Flour (plain)
- 2/3 cup cocoa powder
- 3/4 cup brown sugar
- 1/2 cup (vegan) butter
- 3 tbsp aquafaba, aka liquid from tinned chickpeas
- 1/2 tbsp vanilla extract
- 1/2 cup choc chips, + extra for top
- pinch salt, + extra for top

- Mix together butter, aqaufaba, sugar and vanilla speed 4 for 15 seconds.
Next add in flour, cocoa powder, salt and choc chips and mix for 20 seconds, speed 4 reverse.
Portion mixture into small balls and lightly press down the top and sprinkle with extra salt and choc chips.
Bake cookies in a preheated oven at 190 degrees for 18 min.
Method
Tip
To make these gluten free you can sub in 1 1/4 cup gluten free flour.
If you don't have aquafaba you can make a flax egg with 2 tbsp flax meal and 1/4 cup milk/water.
