Ingredients

Yoghurt

  • 1000 grams Milk, full cream (I use UHT)
  • 30 grams honey
  • 40 grams raw sugar
  • 40 grams milk powder, full cream
  • 1 tsp vanilla extract
  • 120 grams pot set natural yoghurt, I like Fleurieu Milk Company Honey Yoghurt (as pictured) but you can use Jalna, Farmers Union, etc (needs min 10% fat)

Recipe's preparation

  1. Clean bowl, blade, lid and seal thoroughly

  2. Place milk, honey, sugar, milk powder (if using) vanilla extract and yoghurt in TM bowl. Cook for 3 minutes at 37 degrees on speed 3

  3. Go to the Automated menu and select yoghurt setting.  Press "next" until it asks you to turn the dial, turn the dial and wait for it to finish (approximately 8 hours).  It is ok to leave the yoghurt in the bowl for a few more hours so it's fine if you go to work but if you set it at night, you will hear the tone after 8 hours and it rings for 15 minutes!!!

  4. Tip bowl slightly and pour out any whey that might be there.  Pour the yoghurt into a Tupperware container and also reserving 120g in a smaller container to keep to use as starter for next batch.

Tip

Ensure your TM bowl, blades, Lid and seal are super clean before attempting yoghurt.

This recipe can be doubled, just cut back a little milk so you don't go over the 2.2L mark.

I have used the Fleurieu Milk Company 100ml pot as the starter and it works fine, so you don't technically need the extra 20g (it's a lot cheaper this way, these are approximately $1.30 from our local foodland)

We freeze this yoghurt in 100ml containers for a beautiful frozen yoghurt.

This yoghurt is best if not stirred a lot once you have made it.  I like to store in a number of smaller containers rather than a big one to lessen contaminants

A good quality starter is the key to beautiful, thick, creamy yoghurt!

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
