Mix all ingredients 15sec/sp4
Cook in frypan as you would any pancake in butter or coconut oil.
Serve with maple syrup or berry compote or any other favourite pancake topping.
Tip
For extra fluffy pancakes, add 1tsp of GF baking powder with other ingredients and proceed as per recipe.
This amount will make 3 small/medium pancakes. Use this ratio per person and add an extra 5 seconds of time per portion.

These are so easy, and tasty. I found them hard to flip in the pan, so I cook mine in a sandwich press that I grease with a little coconut oil. Works perfectly and makes them super quick to cook.
GF, DF, Sugar free? sounds depressing but they were Absolutely delicious! If you used egg whites only it'd lower the calorie count even more (I sub out eggs for Nature Egg Simply Egg Whites - 100% EW and convenient in a milk type carton - get them from WW or Coles in the egg chiller, great for meringue too!). Actually this was so light and fluffy I think it'll become the go-to pancake choice! Good job Lola-Mai! Thanks!!
