Ingredients

DOUGH

  • 230 grams Milk
  • 60 grams Butter
  • 2 tablespoons sugar
  • 2 teaspoons salt
  • 2 eggs
  • 2 teaspoons dried yeast
  • 550 grams bakers flour

FILLING

  • 70 grams extra sharp cheddar cheese, cubed
  • 45 grams Butter
  • 3 cloves garlic
  • 2 teaspoons dried italian herb mix or equivalent fresh herbs

Recipe's preparation

    DOUGH
  1. 1.   Place milk, butter, sugar and salt into mixing bowl.  Mix 2 min/37 deg/sp 2.


    2.  Add the rest of the dough ingredients and mix 6 sec/sp6, then knead 2 min/Closed lid/dough mode.


    3.   Turn the dough out onto a Thermomat and wrap, or place dough in a greased container and cover.  Set aside to rise for 1 hour.

  3. 1.   Place all filling ingredients into bowl and mix 10 sec/sp 7.


    2.   Set aside.

  4. ASSEMBLY
  5. 1.   Once the dough has risen, punch down and roll out on a floured surface to 12.5mm thick.  Cut into circles with biscuit cutter or egg ring to fit width of loaf tin.


    2.   Spread half of each circle with filling, fold in half and place in loaf tin.  Continue stacking with open edge of half circles upwards until tin is full.  Sprinkle top of loaf with extra grated cheese, if desired.


    3.   Cover with teatowel and let rise for 30 to 40 mins.


    4.   Bake the loaf/loaves in a preheated 180 deg oven for 15 - 30 minutes, depending on size of tins.  (Mini loaf tins - 15 mins, small loaf tins - 20 mins, full size loaf tin - 30 mins) Cover with foil during last 10 - 15 minutes of baking if necessary to keep the top from over browning.


    5.  Remove from tin and cool on wire rack.

Variations:

Pesto instead of butter as filling, replace butter in dough with olive oil.

Herb and garlic butter, 120g butter with herbs of choice.

For a sweet version make a filling with 120g butter, a mixture of cinnamon and sugar to your taste, and dot top of loaf with a little of the filling.
