Ingredients

Dough

  • 100 grams raw almonds
  • 100 grams raw cashews
  • 25 grams psyllium husks, (5 tablespoons)
  • 2 teaspoons baking powder
  • 1 teaspoon Himalayan/Celtic Sea Salt
  • 2 teaspoons No Egg Replacer
  • 2 1/2 tablespoons apple cider vinegar
  • 1 tablespoon water
  • 250 grams Boiling water

Recipe's preparation

  1. Preheat oven to 175 degrees C.  Line a baking tray with baking paper.

  2. Place almonds, cashews and psyllium husks in TM bowl and grind for 10 seconds at speed 9.  Add baking powder, No Egg and salt and turbo 3 or 4 times to combine.

  3. Add 1 tbsp water and vinegar and knead for 20 seconds.

  4. Weigh in boiling water (MUST be boiling) and knead immediately for 1 minute.

  5. Dough will be very sticky but workable with a spatula.  Form into 5 medium ovals and place on baking tray.  Bake for 50-55 minutes until risen and browned and cooked through.  Remove from oven and cool on wire rack completely before slicing.

I highly recommend that you read this blog post and watch the video.  Although this worked for me first time and I found it straightforward (and completely delicious and amazing!!), there seem to be a number of variables that have led to mixed success with this recipe.

The blog post also gives a nut-free version using coconut flour.

    Fantastic recipe and super easy to make!! My son is allergic to milk and eggs and doesn't do well on gluten. These will be a staple in our house from now on. I especially loved the texture They were fluffy and soft not dense at all like some gluten free breads. Thanks for sharing

    Hi Happycook41,

    No time selection required when kneading as the kneading function works at a set speed so just enter your time and the knead function. e.g 20 sec/Dough mode"Dough mode" .

    Thankyou! This is the best gluten free, dairy free bread I've ever made. So easy to make. Turned out perfectly - very light and tasty. Even my non GF DF hubby and kids loved it. I read the comments and followed what someone else had said and added 1 egg instead of the egg replacer and water. Thank you so much for the reciPe. This will be my 'go to' bread recipe now tmrc_emoticons.)
