  • 270 grams tapioca flour
  • 325 gram cheese, preferably costeno but panela or monterrey jack works
  • 1 level tbsp baking powder
  • 1.5 level tsp sugar
  • 1 level tbsp Butter, or ghee
  • 1 piece egg
  • 85 gram Milk

Recipe's preparation

  1. Mix tapioca, flour, baking powder and sugar Closed lid"Closed lid" Blend"Blend" 20 seconds/speed 5

    Trasfer to a bowl and set aside
  2. Chop Cheese Closed lid"Closed lid" Blend"Blend" 7 seconds/speed 6

    Transfer to a bowl and set aside
  3. Place the egg and butter or ghee into the bowl Closed lid"Closed lid" mixBlend"Blend" 40 sec /Warm Up"Warm Up" 100°F/speed 5
  4. Add the milk Closed lid"Closed lid" 10 sec/ speed 3
  5. Incorporate the dry ingredients (flour and cheese) Closed lid"Closed lid" and mix 1min/speed4

    With the aid of the spatula, scrape down the food on the sides of the bowl Closed lid"Closed lid" and program 3 min/Dough mode"Dough mode" dough mode
  6. Place a doughmat on a flat surface and transfer the dough from the bowl. Shape it as a log. Cut in equal pieces and bake either in a waffle maker or shape into elongated pieces and bake in the oven at 390°F for 20 minutes

Tip

If you were to add chopped ham, bacon pieces or any other ingredient, add it at the last minute of the dough mode or as you share the dough.
