Ingredients

  • 300 grams water
  • 30 grams olive oil
  • 30 grams honey
  • 2 teaspoons dried yeast, (1.5 sachets)
  • 500 grams baker's flour
  • 1 teaspoon bread improver, (optional)
  • 1 teaspoon salt
  • 250 grams currants, (or any fruit of your choice)
  • 50 grams mixed seeds/grains, (you could use oats, grains, seeds)

Recipe's preparation

  1. Add water, oil, honey and yeast to the bowl of the Thermomix and heat for 2 mins / 37° / Sp 2 (or until green light stops flashing)

  2. Add the rest of the ingredients in the order that they are listed (ensuring that the salt does not come into contact with the yeast & water).  No need to combine the ingredients as you'll end up crushing the fruit... just go straight into kneading mode: 3 mins / Closed lid"Closed lid" Dough mode"Dough mode" (interval mode)

  3. Add dough to an oiled bread tin (680g size) and wrap the whole tin in a Thermomat.  Leave in a warm spot to rise until it reaches the top of the tin (this can be hard in winter but don't give up - you'll find a warm spot!)  The front seat of your car in winter is quite good.  Sometimes I turn my electric blanket on and pop the tin under the quilt for 30-60 minutes!!

  4. Remove the Thermomat.  This is quite a sticky dough so I don't worry too much about a second rise but I stick the loaf inside a COLD oven and turn the temp on to 180° for 50 minutes (the final stage of the rise occurs as the oven heats up)  Pop the timer on as soon as you've put the loaf in the oven).  Test with a skewer to check that loaf is poperly cooked before sliding it out of the tin, straight onto the oven rack and continue to cook for another 10 minutes (this will give the loaf a lovely crusty finish).

Tip

This bread is so tasty as is on the first day with just a bit of homemade butter.  After that, I love it toasted!

    Thanks for this recipe, turned out to be delicious. I used cranberries, currants and sultanas and also added a bit of cinnamon & nutmeg. I found it didn't need the full 50 minutes to cook. I'll definitely make it again!

    This is the second time I've used this recipe.
    I add 2x tsp mixed spice & 1x tsp cinnamon & make about 10 rolls before 2nd rise.
    Husband loves them (so do I 😉). Lovely buttered & scrummy toasted & buttered 👍

    I found this to be quite a dense bread so I am not sure I would make it again. I gave it first and second rise but even after an hour in a 35 deg oven it didnt seem to rise much. also because the fruit is added at the start of the kneading process it basically gets completely chopped up. Personal preference but I like the fruit kept whole (ie sultanas) so if I did make it again I wouldnt add fruit until the last 30 seconds of kneading. I also think it needs spices or something for extra flavour.

    I added a teaspoon each of cinnamon and nutmeg and 1/4 teaspoon of cloves for extra flavour.

    I make this frequently. I always use 200 grams of cranberries, and then any seeds. We love this bread. Thank you for the recipe

    I just made this with saltanas and cranberries.  I added pepitas. Sunflower seeds and oats...i also added cinnamon. Mixed spice and nutmeg.....holey awsome cant wait for breakfast!!!!

    This tastes amazing and so much better than what you get from the shops. I only added currents and I forgot to add the seeds but it still tasted great tmrc_emoticons.) I plan on making another 2 today slicing then freezing for breakfasts yum!
