Ingredients

MILLED FLOURS

  • 110 g white rice
  • 110 g brown rice
  • 140 g buckwheat grains
  • 80 g quinoa seed
  • 40 g chia seeds

ADDITIONAL DRY INGREDIENTS

  • 200 g Mixed driied fruit, (I use Sunbeam mix)
  • 2 teaspoons dry yeast
  • 2 tablespoons mixed spice
  • 2 teaspoons baking powder GF
  • 1 teaspoon cinnamon
  • 1 heaped teaspoon salt

WET INGREDIENTS

  • 400 g water
  • 30 g olive oil
  • 30 g honey
  • 2 eggs
  • 1 tablespoon apple cider vinegar

Recipe's preparation

    MILLED FLOURS
  1. Place into TM bowl and mill for 1 minute x Speed 9

  2. ADDITIONAL DRY INGREDIENTS
  3. Set aside dried fruit mix

  4. Add remaining dry ingredients to freshly milled flour in TM bowl and mix for 15 seconds x Speed 4. 

  5. Add dried fruit and mix Counter-clockwise operation"Counter-clockwise operation" 30 seconds x Speed 4

  6. WET INGREDIENTS
  7. Add water, olive oil, apple cider vinegar, eggs and honey to TM bowl and mix for for 1 minute x Speed 5.The mix will look like a cake mix consistencyLine a loaf tin with baking paper up high over the sides so it is easy to remove after baking. Pour mix into loaf tin and flatten top evenly with spatula.Put aside for 30 to 40 minutes in a warm spot to start rising. Time will depend on where the loaf is placed and the room temperature on the day. Let it rise until the mix is no more than to 2-3cm from the top of the tin. If it rises to top of the tin it may collapse a little when baking but it won't affect the flavour.Whilst the mix is in rising preheat the oven on to 180 degree.Once risen place loaf in oven and bake for 40 minutes ... check with skewer to ensure it is cooked through. Remove from oven and let it rest in the tin for 10 minutes.

Tip

You can use white vingear instead

This will freeze well for another occasion

You can add seeds on top

Note: prep  does not include 30 minutes of rising

    Great recipe, rises beautifully and makes a generous sized loaf  

    i used quinoa flakes instead of quinoa seeds and the kids scoffed it down  tmrc_emoticons.)
