Mix on speed 6/6 sec
Knead on dough/interval setting for 4 mins
Preheat oven to 200 degress
Loaf of bread - put straight into bread tin to rise until double in size then into oven. Once cooked take out of oven and tip out of tin and return to oven for 5 mins for crunchier crust
For bread rolls or scrolls ect place in lightly dusted Thermomat or bowl with teatowel on top to rest for at least 30 min or hour till doubled. Needs to be in a warm spot. In summer will be fine on bench but in winter may need to go in slighly warmed thermoserver or oven.
Scrolls - Once risen roll out into large rectangle (roughly 60cm x 40cm) and top with desired ingredient. Roll up and cut into desired size. Place on tray covered in tea towel. Let rest for another 30 mins.
Rolls - roll into long sausage shape and cut into 12 pieces. Tuck corners under roll to form round roll. Place into tray, cover with tea towel and let rest for another 30 mins

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

I also loved this. I've practicing every day to get the right fluffy dough. Mine were also a little sticky, but perfectly manageable. Do they really freeze well? Will try cinemon ones soon!
