Grain-free herb and sesame bread - Kyra Miles

  • 40 g sesame seeds, plus extra 1 tsp for sprinkling
  • 10 g mixed fresh herbs (eg parsley, sage, thyme)
  • 120 g zucchini, cut into pieces
  • 150 g almond meal
  • 120 g Tapioca
  • 4 eggs
  • 0.5 tsp salt
  • 0.5 tsp bicarbonate of soda
  • 1 tsp apple cider vinegar
  • 1 tsp Linseeds

Recipe's preparation

  1. Preheat oven to 180°C. Line a loaf tin with baking paper and set aside.
  2. Place 40 g of the sesame seeds into mixing bowl and mill 10 sec/speed 9. Transfer into a bowl and set aside.
  3. Place mixed fresh herbs into mixing bowl and chop 5 sec/speed 8.
  4. Add zucchini and grate 3 sec/speed 8.
  5. Scrape down sides of mixing bowl with spatula, then further grate 3 sec/speed 8.
  6. Add reserved milled sesame seeds, almond meal, tapioca, eggs, salt, bicarbonate of soda and apple cider vinegar and mix 20 sec/speed 5. Scrape down sides of mixing bowl with spatula. Transfer into prepared tin and tap on counter to remove air bubbles.
  7. Sprinkle top with extra sesame seeds and linseeds. Bake for 35-45 minutes (180°C) or until a wooden skewer inserted into the middle of the loaf comes out clean. Transfer onto a wire rack and allow to cool. Store in a sealable container in the refrigerator.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
