Recipe's preparation
Heat pineapple juice, milk, sugar and butter on 3 minutes, 60 degrees, speed 2.
Allow to cool to 40 degrees celcius.
Add yeast and mix 15 seconds, speed 4.
Add egg and vanilla extract, and mix 10 seconds, speed 4
Add flour and salt, knead for 4 minutes.
At this point if dough is still a bit too sticky to touch, add a little more flour and knead for another minute.
Turn dough out into a greased bowl/ thermoserver and alow to prove in a warm spot.
When dough has doubled in size, knock down and divide into 12 equal portions, roll into balls aand place in a greased baking tray. Brush with a little melted butter.
Allow rolls to prove again in a warm spot until well risen, at least double in size.
Bake at 180 degrees for 10 - 15 minutes or until golden brown. Remove from oven and brush again with melted butter.
Serve with ham and cheese or jam and peanut butter.
These rolls are light and fluffy with a delicious, sweet tropical flavour.
