Ingredients
Bread Dough
- 350 g Water.
- 2 tsp Yeast
- 2 tsp sugar
- 600 g bakers flour
- 2 tsp bread improver
- 2 tsp salt
- 30 g olive oil
Mexican Beef
- 500 g Beef mince
- 1 sachet Mexican Taco Seasoning
- 20 g olive oil
- Generous --- Drizzle of Sweet Chilli Sauce
Guacamole
- 8 sprigs corriander
- 20 g red onion
- 1 Tomato (cut in halves)
- 1/2 Lemon Juice or
- 1 lime juice
- 3 Ripe Avocados
- salt and pepper to taste
Sour Cream
- 1 Dollop of Sour Cream, Per Scroll

Begin with the Mexican Beef. Add beef mince to TM bowl with Taco Seasoning and Oil. Cook for 5mins/SP 1 "Counter-clockwise operation" /100*C. Once cooked, set aside to cool. Or, cook the night before and refrigerate over night.
Next is the Bread Dough. Add Water, Sugar and Yeast to TM bowl. Heat 2mins/SP 1/40*C. Once complete add Bakers Flour, Bread Improver, Salt and Oil. Set "Dough mode" for 4 to 6 mins. Once finished, set dough aside to prove and double in size.
Set Oven to 200*C.
Once dough is ready, flatten out as much as possible and spread to its maximum. Take the cooked Beef Mince and spread out on to the dough. GENEROUSLY drizzle Sweet Chilli Sauce over the beef mince.
Here's the tricky part. Roll the dough and mince in to a long cigar shape. I find 2 pairs of hands are much better than 1.
Using a sharp knife, cut the dough in to individual circles. Place them on to a baking tray bunched togehter. Cook in the oven for 20mins
Next is the Guacamole. Make it as per the Basic Cook Book method. Once made, put in to a fancy bowl or in a conatainer.
Once the cooked scrolls have cooled, add the Guacomole then Sour Cream on top (or I find putting them in to sepperate bowls/containers to let each person do their own is much easier). Drizzle more Sweet Chilli on top.
These Mexican Scrolls are great for parties or to take to share (or not lol) at work.
