I'm cooking this todayRecipe's preparation
- Weigh cream and milk into TM bowl "Closed lid" . Split the vanilla pod lengthways and scrape the seeds into the TM bowl and add the pod.
- Add remaining ingrdients. Heat 8 min/90 deg C/Speed 2. Remove vanilla pod.
- Pour the mixture (not allowing it to be more than 3cm high) into a shallow container. Allow to cool completely then freeze overnight.
- Cut the frozen ice cream up into chunks no bigger than ice cubes. Place into TM bowl and churn 10 sec/speed 6. Depending on how firm the ice-cream is, you may need to repeat this.
- Either serve immediately or store in freezer until ready for use.
- To serve. Place a scoop of ice cream in a bowl and pour over espresso. Serve immediately.
Tip
Replace the Marsala with whiskey or leave out for an alcohol-free ice-cream.
With so many nostalgic memories surrounding this recipe, I thought it to be the perfect dessert to end off Valentine's Dinner. Spending a week in Italy cooking in a little village north of Venice called Cison di Valmarino, and UK Masterchef finalist 2011 Tom Whitaker being our chef. We made this ice cream in the kitchen of a beautiful luxury 15th Century Villa, Villa Casagrande. Very easy to make in the Thermomix and no last-minute fuss. Thank you to Tom Whitaker and Stirred Travel for allowing us to share this recipe. 11/14/2018

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
