Fluffy Keto Cheesecake with Gin infused Lemon Curd

  • 60 grams Erythritol, Natural Sweetener
  • 3 --- eggs
  • 150 grams freshly squeezed lemon juice
  • 120 grams Butter
  • 60 grams gin
  • 250 grams cream cheese
  • 230 grams cream
  • 1 --- lemon, Zest only
  • frozen raspberries, To Garnish

Recipe's preparation

    Lemon Curd
  1. > Place 60g Erythritol, 3 Eggs, 150g Lemon Juice & 120g Butter into your mixing bowl

    >Select the Thicken Mode (80 degrees for 12 mins)

    >Place mixture into a sealable container and let cool in the fridge and then stir through 60g of gin

    >Let it set in the fridge for 2 hours
  2. Cheesecake Fluff
  3. >Whisk cream with the butterfly whisk - 30 seconds at speed 4 and then transfer to a bowl and set aside

    >Clean and Dry Bowl

    >Blend Cream cheese, zest and Erythritol - 30 seconds at speed 5 (no butterfly whisk)

    >Add whipped cream to bowl and using the butterfly whisk - 30 seconds at speed 4

    >To Assemble, Layer the cheesecake fluff, frozen berries and lemon Curd

    YUM!

Tip

Exclude the gin from the lemon curd for a family friendly version.

    There's only 60g of erythritol listed, which is used in the lemon curd, and it says to add erythritol in the cheesecake part... how much? And also, what speed to thicken the lemon curd please?
