Ingredients

Cupcakes

  • 125 grams Butter
  • 250 grams plain flour
  • 100 grams sugar, or substitute
  • 1 tsp baking powder
  • 1/2 tsp bicarb soda
  • 1/4 tsp salt
  • 2 eggs
  • 2 bananas, Roughly chopped
  • 1/2 tsp vanilla extract
  • 30 grams choc chips, optional

Icing

  • 125 grams Butter
  • 15 grams honey
  • 200 grams icing sugar

Recipe's preparation

    Cupcake Preparation
  1. 1. Preheat oven to 180 degrees

    2. Add butter to TMClosed lid"Closed lid" and melt, 80 degrees 30 sec/sp 4

    3. Add all remaining ingredients and mix 10 sec/sp 5. Scrape and repeat until all ingredients are combined

    4. Pour into patty cases and bake for 12 - 15 minutes, or until golden brown

  3. 1. Add butter to TMClosed lid"Closed lid" and melt, 80 degrees 30 sec/sp 4

    2. Add remaining ingredients and mix on speed 6 until combined and fluffy

Tip

I add the choc chips when I'm not planning on icing the cupcakes. These cupcakes freeze well and are great for lunchboxes or an afterschool snack.

    These were really a hit. We halved the amount of sugar and added a couple of splashes of milk for a less thick consistency. The icing wasn't required as we found the cupcakes to be beautiful with the choc chip cookies.

    will definitely make again.

    p.s these won't make it to freeze let alone two days tmrc_emoticons.;) heehee and I ate one before taking the pic.

    Loved these! They made 42 mini cupcakes. Reduced the flour to 200g as suggested and reduced sugar to 70g and they are so yum 😊

    only added 200g of flour. Icing was so yummy lovely honey flavour went great with the banana cupcake.

    The cupcakes were too dry...

    I tried a second time reducing to 125g the flour and they ended up just perfect!

    Great recipe... I have been looking for an easy one that goes well for cupcake. I did on mini cupcake size for my son's birthday and everyone loved it. Doing now on the normal cupcake sizes for school... thanks for posting!!!!!

    Nice flavour and easy enough to prepare.  We also didnt do icing, but did add the choc chips and we found that was nice.  A good go-to recipe for lunchbox fillers.
