Ingredients

Rice pudding

  • 3 Cups cooked long grain rice, as per EDC
  • 750 ml Milk
  • 300 ml cream
  • 560 ml coconut milk
  • 150-180g raw sugar
  • 3/4 tsp ground cardamom
  • 120g golden sultanas
  • 80g pistachios, Roughly chopped

Dried fruit compote

  • 2 cups water
  • 200g sugar
  • 8 cardamom pods
  • 2 star anise
  • 3-4 Strips lemon rind, No white pith
  • 1 cup dried apricots, Roughly chopped
  • 1 cup dates

Recipe's preparation

    Rice pudding
  1. place cooked rice and milk into the TM bowl Closed lid"Closed lid" and bring to the boil, 105 deg/ 10min/ speed 1/ Counter-clockwise operation"Counter-clockwise operation" .
  2. Reduce heat to 60 deg/ speed 1/10min/ Counter-clockwise operation"Counter-clockwise operation" till the mixture has started to thicken.
  3. Add cream, coconut milk, sugar & cardamom to the Closed lid"Closed lid" and cook a further 20 min/95 deg/ speed 2/ Counter-clockwise operation"Counter-clockwise operation" /cup off.
  4. Add sultanas & chopped pistachios and continue cooking - 95 deg/ speed 2/Counter-clockwise operation"Counter-clockwise operation" /10 min.
  5. The pudding should be reduced and thickened. Prolong cooking time if required
  6. Dried fruit compote
  7. Add water, sugar, spices & lemon rind to the TM Closed lid"Closed lid" and bring to the boil 10 min/ 100 deg/ Gentle stir setting"Gentle stir setting" / Counter-clockwise operation"Counter-clockwise operation"
  8. Add dried fruit. Remove the cap and cook 30-40 min/ 100 deg/ Gentle stir setting"Gentle stir setting" / Counter-clockwise operation"Counter-clockwise operation" until the fruit is soft and syrupy.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31).
